From Northwest India comes this flatbread, usually cooked in an 800°F. tandoor oven and served with various dishes. No tandoor is required here; in fact, even the Indian dishes are optional. Enjoy this naan with a Middle Eastern dish or any other food you choose.
Makes 3 large naan
• 4½ tablespoons warm milk (105°F. to 115°F.)
• 1½ teaspoons active dry yeast
• 1 cup unbleached white flour
• 1 cup whole wheat flour
• ½ teaspoon salt
• 1 tablespoon vegetable oil
